Trailer Deep-Dives
Here, we highlight a few most recent builds so you can see the process from start to finish through the lense of a real-world client.
Bevvie
The Brief
Bring Bevvie’s beverage service to events in a trailer organized around the equipment behind every drink. The project needed space for fountain systems, chilled ingredients, ice, water, cleaning and a recognizable serving side.
The Layout
The design developed from an early 18-foot layout into an 8.5-by-20-foot trailer on an aluminum frame. The longer body made room for a dedicated rear syrup and CO2 area, with a separate mechanical cabinet at the front.
Two soda systems
Separate Coke and Pepsi fountains, pumps and bag-in-box syrup systems gave the layout a clear set of equipment and supply requirements. Routing, mounting and storage were planned alongside the serving workspace.
Storage around the workflow
Custom aluminum syrup racking and stainless shelving above the sinks and syrup area created dedicated places for ingredients and supplies while preserving working counter space.
Mechanical access
A front mechanical cabinet kept supporting hardware separate from the rear syrup and CO2 storage. The arrangement provided an organized place for connections and service access.
Water and cleanup The project included upgraded water storage, a hand sink and a three-compartment sink. The pre-opening inspection records a 100-gallon wastewater tank. Fresh-water capacity differs between source records, so no final fresh-water gallon figure is stated here.
Cold preparation and ice
A 48-inch refrigerated prep unit, glass-door refrigerator and 36-inch ice chest supported chilled ingredients and drink preparation alongside the soda equipment. A visible menu
An exterior TV display with its own enclosure provided a place to present the drinks and options at the serving side.
The Result
A beverage trailer organized around Bevvie’s actual operation: fountain service, ingredient storage, mechanical equipment, cold preparation and cleanup, with the brand visible to customers.
“You don’t want to use anyone but St. Croix Trailers, period. They are the best in the business hands down and you will regret not using them. The build quality is one of a kind, which saves you a ton of money in the long run because it is done right from the beginning.”
-Mitch Riebow, Bevvie Dirty Sodas
XO Pizza
The Brief
For Michael and Chelsea Gauthier’s XO Fire, wood-fired pizza is the center of the business—and the center of the trailer. St. Croix Trailers built the project around an open rear oven porch, an enclosed kitchen and a separate serving window. The result gives the oven a visible place in the customer experience while carrying the working equipment a mobile pizza operation needs.
Build specifications and design decisions
Visible oven porch
Open rear porch with a Forno Bravo Viaggio 110 oven; separate enclosed kitchen and serving window. Makes the oven visible while giving customer service its own opening.
Custom extension and axle placement
Three-foot change-order extension; axle relocation documented around center of gravity and oven weight. Adapts the trailer layout and load arrangement to the actual equipment.
Pizza production equipment
Revised scope lists full-size fridge, pizza racks, Estella 30-quart mixer, countertop fryer and griddle. Brings ingredient storage, dough preparation and supporting cooking tasks into the mobile kitchen.
Expanded ventilation scope
Nine-foot hood upgrade, makeup air and additional suppression nozzle. Coordinates ventilation and suppression with the revised cooking arrangement.
Event support systems
Revised scope: 11 kW generator; 30-gallon fresh and 40-gallon waste tanks; four electric stabilizers and front jack. Provides for power, washing, wastewater storage and setup.
Graphics around real openings
Three-quarter custom wrap; logo and tagline repositioned around the open porch. Keeps the brand legible on the actual body rather than only on a flat proof.
Final Build
XO Fire operates in central Minnesota, with project records connecting the business to Avon. Its event schedule reaches beyond one fixed address: Sunny Mary Meadow lists XO Fire for wood-fired pizza at its St. Joseph flower farm, and Third Street Brewhouse lists the business at its Cold Spring taproom. Those settings explain the value of a kitchen that travels with the menu, preparation space and customer-facing identity in one unit.
