FAQs
High-output exhaust hoods pull a massive amount of air out of the trailer. Without a Make-Up Air system, the trailer develops negative pressure, which can cause the hood to fail, gas appliances to pilot out, and the service door to become difficult to open. St. Croix includes MUA to ensure safety and code compliance.
Yes. We install shatterproof, code-compliant LED lighting that meets the specific foot-candle (LUX) requirements for food preparation areas. This ensures you pass health inspections without having to retrofit expensive lighting later.
The cooking line is fully equipped with a 40# fryer, a 24″ griddle, and a 24″ oven/stove-top combo. This setup, paired with the Ansul Fire Suppression system, is designed for immediate commercial operation.
Because we build from the ground up, the 6×2 mainframe and 7k torsion axles provide the structural rigidity needed to carry heavy Ansul systems, MUA units, and full water payloads without the frame flexing or sagging over time.
